Mary McCartney becomes patron of the Vegetarian Society

 

The Vegetarian Society is pleased to announce that Mary McCartney is now a patron of the charity.

Mary, a photographer, whose work spans the worlds of portrait and fashion photography, said, "I feel honored to be asked to be a patron of the Vegetarian Society. They provide a great resource of information and inspirational menus that are easy to access and bursting with flavour."

Mary joins family members Sir Paul and Stella McCartney who are also patrons of the 160 year old membership organization. Paul and Linda McCartney became patrons of the Vegetarian Society in 1995.

Annette Pinner, Chief Executive of the Vegetarian Society, said, "Vegetarianism is a subject close to Mary's heart so we are very pleased that she has agreed to become a patron of the Vegetarian Society during National Vegetarian Week – it’s a fitting way for the charity to celebrate the Week."

To mark the Week Mary is sharing the secrets of one of her favourite recipes, a simple and heartwarming soup.

Recipe:

Hearty soup:
1 large onion, chopped small
2 carrots, cubed,
2 stalks celery, cubed
50ml olive oil
1 tin butter beans
250g green beans, chopped
3 cloves garlic, chopped small
½ small head of cabbage finely chopped
1 small red chilli, finely chopped
A handful of finely chopped parsley
1 tin chopped tomatoes
2 bay leaves
1.2 litres vegetable stock
Salt and pepper to taste
In a large saucepan sauté onion and garlic, stir in carrots, celery, beans, cabbage, chilli, tomatoes, bay leaves. Pour in stock and simmer gently for 20 minutes (until vegetables are tender). Stir in parsley and cook for 5 more minutes. Add more stock if required. Serve warm with sprinkle of parsley (optional) and warm crusty bread.
