New Traditions – Recipes for a meat-free
Christmas from The Vegetarian Society.
“Christmas is a time
to uphold traditions, a time to celebrate, socialise and relax. Family
and friends take centre stage and at the
heart of the season, a special meal.
"Christmas dinner
brings people together – aunts and uncles, grandparents,
siblings, lovers and friends. There could be any combination of generations
and relationships gathering at your table; and any combination of dietary
requirements. It’s no longer unusual to find carnivores, vegetarians,
dairy or meat-reducers, and vegans rubbing shoulders at a festive feast.
This does, however, raise the question of how do you cater for them all?
You want to share fabulous food with the people you love, but presenting
them with separate meals undermines the sense of togetherness and creates
more work for the cook!
"To solve this problem
The Vegetarian Society asked me to create a brand new Christmas menu
that
will work for everyone. Using Swedish Soft Original
(the dairy-free alternative to cream cheese) and Swedish Glace (dairy-free
frozen desert) really helped the process and, I think you’ll agree,
the results are absolutely stunning. I also recommend serving Swedish
Soft – both Original and Garlic and Herb - with after dinner crackers
for those guests who don’t have a sweet tooth.”
