WILD MUSHROOM WEEKEND
People are passionate about mushrooms. From Anton Carluccio to Paul Gayler, Raymond Blanc to Marco Pierre White, gourmets everywhere appreciate the wild, the woolly and the downright wonderful. Along with bruschetta, basil and balsamic vinegar, mushrooms are the essence of nineties eating.

But, as anyone who knows their ceps from their morels will tell you, not all fungi are equal. The cultivated varieties that cram the shelves of supermarkets are as far removed from the complexity of flavour and texture of wild mushrooms as Mother's Pride is from pain complet. And what's more, they're there for the picking.

Wild Mushroom Weekend is a comprehensive introduction to the fascinating subject of wild mushrooms, hosted by mycologist Patrick Harding of Sheffield University with cookery demonstrations by a Cordon Vert cookery tutor.

The weekend begins on Friday evening with dinner with wine, followed by an introductory talk. After an early breakfast on Saturday Dr Harding will discuss guidelines for safe and sensible gathering before accompanying students on an expedition to observe, identify and collect wild fungi in a variety of locations. The beautiful Cheshire countryside abounds with many different species of mushroom and a packed lunch is provided to allow a maximum of time to be spent 'in the field'. Dinner is served at Parkdale, followed by an optional slide show.

Sunday is devoted to lectures and practical demonstrations, covering topics from folklore and medicinal uses to recipes and preserving methods. The course concludes after lunch and all participants receive a full information and recipe pack to take home with them.
