A Guide to Al Fresco eating

Peach and Ginger Iced Tea

INGREDIENTS:

6 TEA BAGS


1.2 LITRES BOILING WATER
2 TBSP CASTER SUGAR
12 SPRIGS FRESH MINT
300ML (10 FL OZ) PEACH JUICE
1 TBSP GINGER CORDIAL (UNDILUTED)
ICE 2 FRESH PEACHES SLICED


METHOD:

1. Use the boiling water and tea bags to make a strong pot of tea. Add the sugar and half the mint leaves and allow to stand for 15-20 minutes. Remove the tea bags and cool, then remove the mint.

2. Mix the peach juice and ginger cordial together.

3. Put lots of ice into a large jug or punch bowl. Pour in the cold tea and peach and ginger mixture.

4. Add the sliced peaches and remaining fresh mint leaves. Stir thoroughly and serve immediately.
