Breakfast Dishes

1. Fresh Fruit Medley

serving, vegan
1 apple
1 orange
50g white grapes
sprig of fresh mint
Wash, core and slice the apple. Peel and segment the orange. Wash the
grapes and remove seeds if necessary. Mix together and serve at once
with a sprig of fresh mint.

2. Soya Surprise

serving, vegan
2 tablespoons soya milk
1 banana
4 dried apricots
2 tablespoons chopped walnuts
Pour the soya milk into a serving dish. Peel and chop the banana and
chop the apricots. Mix the banana and apricots with the soya milk. Sprinkle
the top with the chopped walnuts.

3. Yogurt Surprise
1 serving
1 small carton plain low fat yogurt
1 banana
2 dried dates
1 tablespoon wheatgerm
Empty the yoghurt into a serving dish. Peel and chop the banana. Remove
the stones from the dates and chop finely. Fold the banana and dates
into the yogurt. Top with the tablespoon of wheatgerm and serve at once.
