Chico Francesco of Portuguese, Sicilian and Goan descent, has travelled the world for years not in search of sea, sun and sand, but looking for fine and unusual ingredients, recipes and gourmet food.
His ethnic background has helped and influenced his culinary success, which the Cookery School has come to benefit from and appreciate.
He exploits a lot of unusual ingredients and incorporates them into gourmet recipes.
Many of the dishes he presents for the School have been collected first hand while travelling, or simply devised by himself, always maintaining the true character of the region or dish.
He now runs the Citrus Tree, a business which is actively involved in training and the promotion of ethnic and healthy foods to companies all over the world.
Chico also hosts an exciting array of day courses at the Cordon Vert Cookery School.
The one day courses are packed, not only with delicious, interesting and non-mainstream vegetarian food, but also with useful tips, tricks and food education and are suitable for industry professionals and food enthusiasts alike.
