KAFFIR LIME LEAF, BLACK EYE AND ADUKI BEAN CROQUETTES

I bought these delicious croquetes while shopping down one of the busy streets in Chiang Mai. I have adapted the recipe to create a more interesting balance of flavours.

Ingredients

125g/4½oz black eyed beans, cooked
6 kaffir lime leaves
1 in piece of lemon grass
125g/4½oz aduki beans, cooked
1in piece root ginger, chopped
1 or 2 red chilies
groundnut oil for frying

Method

1. In a food processor combine all the ingredients and blend until a rich paste has developed.

2. Form small medallions from the paste.

3. Heat the oil in a large frying pan and shallow fry the croquettes for 3-4 minutes.
