FRUIT FEAST

Ursula Ferrigno (formerly of the Cordon Vert Cookery School) picks up the best of late summer fruits

Now's the time to take advantage of all the late summer and early autumn fruits that are appearing in the shops. Fruit has a host of uses: as a healthy snack which refreshes and enlivens the palate, in homemade beauty treatments, and bottled to bring back memories of glorious summer days.

The Mediterranean diet relies on fresh fruit to follow every meal instead of heavily dairy-laden desserts. But as our recipes show, there are other exciting ways to use the current glut of stunning late summer fruits - apricots, apples, blackberries, damsons, greengages, grapes, peaches and pears. If you can't find the demand to keep up with the supply, why not try preserving and bottling the excess fruit - bottling and jam making are excellent ways to enjoy fruit out of season.

Hang on to summers magic with our seven exclusive recipes that make the most of seasonal fruit.
