GO GREEK

Most of us have experienced Greek cookery here or on holiday. Now is your chance to make totally vegetarian and vegan versions in your own home. All these recipes are a delight and will remind you of relaxed evenings spent in tavernas on a timeless Greek island. Why not play a Greek tape to create a really authentic atmosphere?

Remember too that Greek food is good for you - lots of fresh vegetables, salads, pulses, nuts, pasta and, if you're not vegan, delicious feta cheese, greek yoghurt and local wild flower honey. Not forgetting, of course, lashings of fresh olive oil.

Traditionally, Greek people ate a largely vegetarian diet, although they would never have called themselves vegetarian. Meat was only eaten occasionally on festivals or when a special guest arrived. If it was used in a normal meal it would have been part of a mixed casserole with beans and vegetables.
