8oz / 225g firm tofu
4 small onion, finely
sliced
½ -1tsp miso
1-2tsp rice vinegar
8 spring onions, finely diced

In a liquidiser purée the tofu with 1-2tbsp of water.
2. Add the onion and miso and liquidise until creamy.
3. Add the rice vinegar and extra water if necessary.
Stir in the spring onions and serve over salads.
