Ingredients

Fresh ripe mango, peeled & cubed
400g/14oz Cherry tomatoes, halved
1 Large red onion, sliced thinly into half rings
250g/9oz Mixed green salad leaves
Dressing:
30ml/2tbsp
Olive oil
30ml/2tbsp Rice vinegar
Freshly ground Salt & Black Pepper
Method
1. Combine all
salad ingredients in a bowl.
2. Mix dressing ingredients
together, pour over salad and toss well.
3. Transfer to a serving
bowl.
