Passionate, vivacious and effervescent, Ursula Ferrigno
is to vegetarian cookery what Champagne is to Chardonnay. Her first
book, The 90s Vegetarian, captures the essence of her inimitable
style.
Ursula
Ferrigno couldn't be further removed from the bean casserole/brown
sandal/beard image of vegetarianism. Former principal tutor at The
Cordon Vert Cookery School, Ursula is half Italian and her deep love
of the native cuisine of Southern Italy inspires all her recipes.
Ursula
learned to cook as a child by watching her grandmother prepare traditional
family meals. In the mid-eighties she opened the first vegetarian
restaurant in the North West which took Southport by storm, and in 1990
began her association with The Vegetarian Society.
She maintains her links with Italy by returning there every summer to
teach at San Orsola cookery school based in a 12th century Umbrian farmhouse
built by Benedictine monks.
In
addition to her inspirational teaching, Ursula has been food consultant
to Marks and Spencer's bakery department. Members living in the West
Country may be familiar with her infectious enthusiam from the HTV
series Green Grow the Dishes.
