Serves 4
Ingredients
2 Florida pink grapefruit
1 small star fruit, sliced
1 red apple, cored and sliced
1 kiwi fruit, peeled, halved and sliced
2oz / 50g strawberries, hulled and sliced
2tbsp Kirsch
2tbsp freshly squeezed Florida pink grapefruit juice
1tbsp sesame seeds
freshly ground white pepper
pinch of freshly grated nutmeg
fresh sprig of mint to garnish
Method
1.
Cut each grapefruit in half through the centre then using a small sharp
knife carefully cut out the halved segments, leaving the membranes
in the shell.

Place the grapefruit segments in a bowl and toss together with the star
fruit, apple, kiwi fruit, strawberries, Kirsch and grapefruit juice.
3.
Using a grapefruit spoon, scoop out any remaining membrane from the
shells and discard. Spoon the fruit mixture back into the shells.
4.
In a small bowl combine the sesame seeds, pepper and nutmeg and sprinkle
over the fruit. Garnish with a fresh sprig of mint and serve well chilled.
