Chinese Cabbage & Spinach


Serves 4

A delicious and colourful green salad with an unusual sweet and sour dressing.

Ingredients

½ largish Chinese cabbage (about 16oz / 450g) thinly sliced crosswise 4oz/100g young spinach leaves, washed, drained and chopped
1 pomegranate

Dressing

4floz / 100ml sunflower or other vegetable oil
2tbsp lemon juice
1tsp poppy seeds
1tsp cider vinegar
1tsp honey

Method

1 Combine the Chinese cabbage and spinach leaves in a bowl.

2 Cut the pomegranate and break out the seeds into the bowl, avoiding adding any of the bitter yellow skin.

3 Blend the dressing ingredients together until smooth and pour the dressing to taste over the ingredients in the bowl.

4 Toss well, turn the salad into a serving bowl and serve.
