A WINTER'S TABLE

Christmas Pudding Ice Cream
A wonderfully simple idea from Australia, where they celebrate Christmas in the middle of summer.


Ingredients

500ml/16floz best quality ready-made vanilla ice-cream
225g/8oz Christmas pudding, mashed or crumbled finely

Method

1. Allow the ice-cream to soften slightly, then transfer to a bowl and quickly but thoroughly mix in the crumbled Christmas pudding.

2. Return the mixture to the freezer to firm it up before serving.
