These savoury
nut balls are very quick to prepare.
1 medium onion, finely
chopped
1 small clove garlic, finely chopped
2 tbsp vegetable oil
8oz/225g tomatoes, skinned and chopped
4oz/100g almonds, ground or coarsely crushed
6oz/175g wholemeal breadcrumbs
salt and freshly milled black pepper to taste
freshly chopped parsley to garnish
1. Sauté the
onion and the garlic in the oil in a pan until softened. 2. Add the tomatoes
and cook for another 5 minutes.
3. Pour the mixture
into a bowl and add the almonds and breadcrumbs.
4. Mix well. Season
to taste with salt and black pepper.
5. Form the mixture
into small, bite-size balls. Arrange on serving plate and cover them
with masses of chopped parsley.
