These
savoury squares are unexpectedly good.
2oz/50g vegetable
margarine
1 finely chopped onion
4oz/100g mushrooms, chopped (optional)
5oz/150g rolled oats
6oz/175g finely grated carrot
5oz/150g vegetarian cheese, grated
1 free range egg, beaten
1 clove garlic, crushed (optional)
1 tbsp soya sauce
1 tbsp tomato sauce or purée
1 tsp basil
salt and black pepper to taste

Preheat oven to 170°C/325°F/gas mark 3.
2. Melt the margarine
in a pan. Gently cook the onion and mushrooms for 5 minutes. Transfer
them to a mixing bowl and add all the other ingredients.
3. Season to taste with
salt and pepper and mix well. Press mixture into a greased, shallow baking
tin and bake for 25-30 minutes.
4. Cut into 20 small
squares and serve.
