Beating Diabetes

SPICY CHICK PEA SOUP
Serves 3-4

Total CHO 50g, Total calories 370


Ingredients

4oz/100g dried chick peas, soaked overnight. rinsed and drained
1 carrot, peeled and diced
1 stick celery, sliced
1 onion, finely chopped
1 clove garlic, crushed
1 red pepper, diced
2tsp/10ml spoon garam masala
1tsp/5ml chilli powder
1tsp/5ml grated fresh root ginger
salt and freshly ground pepper
1 pint/825ml vegetable stock

Method

1. Bring the chick peas to the boil in plenty of unsalted water.
Boil fast for 10 minutes, drain.

2. Place in a non-stick pan with the vegetables and cook gently for a few minutes.
Stir in the spices and ginger and lastly add the stock. Season.

3. Bring to the boil, cover and simmer for 35-40 minutes or until the chick peas are cooked.

You don't have to be diabetic to enjoy these recipes. Anyone can try them and appreciate the great taste of healthy low fat, high fibre cooking.
