Celebrity Recipes for NVW '95

Mango Fool

Serves 4-6
This delicious dessert can be made with either fresh or canned mangoes. The crushed cardamom seeds give it an extra zing.

 

1lb / 450g canned mango slices or the equivalent amount of fresh mango, stoned and peeled
½pt / 200ml canned evaporated milk
seeds of 6 cardamoms, crushed
approx 1tsp sugar
whipped cream to serve

 

Place the mango, evaporated milk and cardamoms in a liquidiser and blend until smooth.

Add a little sugar if necessary.

Pour into a large serving bowl, or individual dishes, and chill for 20 minutes before serving.

Serve with whipped cream.
