Mixed Cheese and Spring Onion Rolls

6 crisp bread rolls (available from the ASDA in-store bakery)
4 medium free-range eggs
200ml / 7floz skimmed milk
40g / 1½oz edam cheese, grated
40g / 1½oz ASDA Healthy Choice Mature (Lower Fat Cheddar Style) cheese, grated
1 x 15ml / 1tbsp pecorino cheese (optional)
3 spring onions, sliced

1. Cut the top off each roll and pull out the soft bread from the centre leaving a shell approximately 1cm / ½ inch thick. Place rolls on baking sheet.

2. Beat the eggs with the milk, add the cheeses and the spring onions. Divide the mixture between the rolls.

3. Bake at 200°C/400°F/Gas Mark 6 for 20 minutes or until the filling has set.

4. Serve hot or cold.
