Recipe Collection - It's a Wrap!

 

Quorn is a very versatile food and, being high in protein but low in fat, is an excellent ingredient for vegetarians. Quorn chunks and mince are really easy to use, and they can help to save time in the kitchen if you are in a hurry.
Just lightly fry the Quorn in a little oil before adding it to your favourite dishes. You can also marinate Quorn chunks before using them, to add a variety of flavours - the recipe below shows you how.

Quorn Tortilla Wrap

Serves 4


225g / 8oz Quorn chunks
30ml / 2tbsp shoyu
pinch chilli powder (optional)
30ml / 2tbsp vegetable oil
4 iceberg lettuce leaves, shredded
½ cucumber, chopped
4 ripe tomatoes chopped
handful of fresh coriander leaves, roughly chopped
½ small red onion, shredded
4 large soft flour tortillas
½ lemon, juice only or 30ml/2tsp of salad dressing
black pepper to taste

1. Place the Quorn chunks in a bowl. Mix the shoyu with the chilli powder if using and drizzle over the Quorn. Toss well to coat and leave to marinate for 15 minutes.

2. Heat the oil in a non stick frying pan and gently fry the marinated Quorn for about 10 minutes, until starting to colour. Remove with a slotted spoon and allow to drain.

3. Mix all the salad ingredients together in a bowl and sprinkle with lemon
juice or salad dressing.

4. Place a quarter of the salad on one half of each tortilla and top with Quorn. Grind a little black pepper over. Fold the tortilla in half and roll up. Eat immediately, or place in a picnic container and eat on the move!

Variations

Changing the marinade and the combination of salad items you use can completely change the character of the wrap, so why not ring the changes?

Italian
Marinate in flavoured olive oil, add slivers of black olives, torn basil leaves and strips of red peppers to the salad.

Chinese
Marinate in shoyu with a pinch of Chinese fivespice, try bean sprouts and thinly sliced water chestnuts or mushrooms in the wrap.

Indian
Add a pinch of garam masala and some black mustard seeds to the shoyu marinade, try a blob of mango chutney with the salad.

Mexican
Extra chilli powder in the marinade. Add some spicy tomato salsa in the wrap.

Gardener's delight
Mix a teaspoon of mustard with the shoyu marinade. Tomato slices, watercress and grated carrot make a colourful addition to the salad.

Energy Booster
Add toasted sunflower or pumpkin seeds and freshly sprouted alfalfa or mung beans to the salad.

Beware too much salad dressing, chutney or salsa in the mixture can leave your tortilla damp if you don't eat it right away!
