Bread Pizza

Preparation time - 5 minutes
Cooking time - 10-12 minutes
Ingredients
French
stick - cut into 4 pieces 1 stick
Olive oil 50ml/3 tbsp
Tomatoes sliced 4 medium
Vegetarian pesto 125g*
Coloured vegetarian cheddar, grated 200g/7oz*
Oregano 15ml/1 tsp
Method
1. Preheat
oven to 160°C, 310°F, Gas 2
2. Cut French stick in half crossways, and then half again
lengthways, place on baking tray and brush over the bread
with olive oil.
3. Thickly spread with pesto, arrange sliced tomatoes, and
sprinkle over the grated cheese and oregano.
4. Place in oven for 10-12 minutes until the cheese is golden
brown and bubbling.
*To make
a vegan version, replace the pesto with vegan pesto and the
cheddar with soya cheese substitute
Ideas
for variations
1. Try adding
sautéed fennel and leek with black pepper and mozzarella
2. Create antipasto pizza - top with artichokes and olives, balanced
with freshly grated Pecorino cheese and pineapple pieces.
3. Thinly slice some garlic and smoked veggie sausages and add plenty
of white pepper to satisfy a pepperoni craving!
4. Use pitta, ciabatta, foccacia or even puff pastry for an instantly
different pizza
5. Go Indian! - replace the French stick with naan and the pesto
with a mild curry paste or aubergine pickle, you could even try
crumbling paneer (Indian cheese) over your pizza instead of Cheddar.
6. BBQ? - try halving the French stick, scoop out the middle then
refill the crust with all the other ingredients. Wrap in tin foil
and BBQ!
