Elliot's variation
I'd try an Indian version of the Stir-fry, omitting the soy
sauce and instead stirring in a good heaped tablespoonful
of Balti curry paste once the veg are cooked. Top with chopped
fresh coriander and serve with cooked Basmati rice and poppadums.

Add cubed tofu for additional protein and calcium
2. Add flaked almonds and a dash of Caribbean pepper sauce
to give it a real lift!

Turn
it into a thai curry
You just need to add three small things for a real change
into a thai curry: lemon grass (widely available in supermarkets),
green chilli and creamed coconut. Gorgeous!
