As part of the promotion for Vegetarian Week 2004 the companies' Chefs
have developed a folder of innovative recipes which can be used in all
aspects of the business; restaurants, deli bars and fine dining facilities.
All of these recipes have been vetted to ensure they meet the guidelines
of the Society. In preparation for further unit accreditations, these
recipes, along with a set of vegetarian disciplines, are to be introduced
across
the whole
Baxter & Platts' estate. Chris Dury, General Manager for the companies'
contract at BG Group in Reading, says "before the introduction
of this unique guarantee of the Vegetarian Society Accreditation, Vegetarian
uptake was about 15%, now this has risen to about 25%. Our customers
now see our vegetarian dishes as just another choice – not solely
for the vegetarians." The company aims to extend its number of accredited
units to 50 client sites throughout the South East in time for Vegetarian
Week 2004.
During Vegetaraian Week each unit will have a focus on Vegetarian
meals - there will be a Chefs competition for the Chef who increases
his
vegetarain meal uptake as well as spot prizes for customers and staff.
