SMOKED QUORN TACOS
Preparation time: 10-15 minutes
Cooking time: 15 minutes
Fills 4 taco shells
Ingredients
175g Quorn mince
1 tbs olive oil
½ medium onion, very finely chopped
1 – 2 cloves garlic, crushed
1 tsp sweet smoked paprika
pinch cumin
1 tsp dried thyme
200ml light stock (e.g. Marigold Bouillon, green label)
1 small red chilli, very finely chopped
2 tbs chopped fresh coriander
To serve: taco shells, shredded lettuce, sliced tomatoes and grated
mild cheese
Method
1. Sauté onion
in a little olive oil until soft, about 5 minutes. Stir in garlic,
then
add minced Quorn, smoked paprika, cumin, and thyme.
Stir for 1 minute.
2. Add a little stock. Stir and cook until the liquid has been absorbed.
Continue adding the stock a little at a time, each time stirring and
cooking until the liquid has been absorbed. The process will take about
10 minutes.
3. Add the chilli and coriander and stir through. Taste and adjust
seasoning, adding more smoked paprika as desired. Go easy on it though,
as the flavour can be over-dominant. The mixture should be quite dry.
4. Serve in crisp taco shells with shredded lettuce, sliced tomato
and a mild grated cheese.
