Training the chefs
The Cordon Vert School took their two-day Professional Chef’s
course, ‘Catering for Vegetarians’, to Parliament on 20th
and 21st April 2005. We not only trained ten House of Commons chefs in
the art of catering imaginatively for vegetarians, but also
in
recognising what vegetarians do and don’t eat!
This training event was organised in time for the House of Commons chefs
to be ready for National Vegetarian Week, 23rd-29th May 2005. Chefs from
different kitchens were trained by tutors Sarah Kearns and Marise Maddison,
ably assisted by trainee tutor Mo Hall. All the chefs are now keen and
eager to put their new skills into daily practice in all aspects of
catering at the House of Commons. Now your MPs can get fabulous vegetarian
meals in their workplace, knowing that their chefs have been trained
by the best vegetarian school in the world. As one House of Commons chef
said, ‘Thank you for dispelling the myths and mysteries surrounding
vegetarianism’.

WHAT YOU CAN DO
We want to extend this training facility to local councils, schools
and other government bodies, so that everyone, not just MPs, can enjoy
the benefits of having well trained chefs in their workplace too. Because
we all know, the more professional training The Cordon Vert School can
do, the greater understanding caterers will have of vegetarian cuisine.
This will have the effect of improving menu choices, not only for vegetarians,
but for everyone.
