Summer Superfood - Free Recipes

from Tenderstem® Broccoli and the Cordon Vert Cookery School

The Vegetarian Society’s Cordon Vert Cookery School has joined forces with Tenderstem® broccoli to create three delicious summer recipes packed with superfoods.
· Tenderstem® broccoli and Chickpea Frittata
· Roasted Tenderstem® broccoli, Grilled Halloumi and Cherry Tomato Salad
· Tenderstem® broccoli and Sweet Potato Filo Rolls
Andy Macdonald Tenderstem spokesperson said, “Tenderstem is the ideal ingredient for vegetarian cooking, it’s packed full of vitamins and minerals, is easy to prepare and only takes minutes to cook.”

“The recipes developed by the Vegetarian Society demonstrate that fabulous cooking doesn’t require meat to be nutritious, healthy and delicious.”

Christine Tilbury, Manager of the Cordon Vert Cookery School, commented, “The recipes celebrate Tenderstem® broccoli being an official partner of National Vegetarian Week 2007 and are fabulous for a picnic, party or as tasty treats at a barbeque.”

National Vegetarian Week 21-27 May 2007, sponsored by Cauldron Foods, is co-ordinated by The Vegetarian Society but includes events and activities organised independently by local vegetarian groups, eateries, schools and businesses across the nation.

• Tenderstem® broccoli has a mild, distinctive flavour and a texture more akin to asparagus than traditional broccoli and it's deliciously succulent. As the name suggests, Tenderstem® broccoli is tender from floret to stem so you can eat the whole vegetable, unlike ordinary broccoli, which tends to have a thicker, and sometimes woody, stem. Tenderstem® broccoli provides a tasty alternative to traditional green veg and is nutrient rich – 100g portion provides the full daily requirement of vitamin C!
