Celebrities reveal their favourite veggie sandwiches for
British Sandwich Week 6 -12 May

Sandwich eating is part of the British way of life. Convenient, filling
and nutritious, no lunchtime should be without one. Thinking of exciting
sandwich fillings, as a vegetarian, needn't be tricky and to inspire
you The Vegetarian Society contacted Richard Cawley, Diane-Louise Jordan,
Fiona Phillips and Wendy Turner-Webster and asked them for their favourite
veggie sandwich. So, for British Sandwich Week, here's a bit of inspiration
for you!
My favourite sandwich filling is simply to combine the buttery richness
of mashed avocado (with a squeeze of lemon) with the salty tang of crumbled feta
cheese, plus the added bite of a few fine rings of red onion with a twist of
black pepper. Either in a sandwich or wrap, piled on top of a piece of grilled
or toasted crusty bread as a crostini snack or starter. It looks
as colourful and stunning as it tastes good! ~ Richard Cawley.
Ideally the sandwich would be made on home-made bread spread with real
butter. Place a layer of rocket leaves on one slice of bread and top with peeled
and sliced avocado sprinkled with pine nuts. For a bit of extra flavour, drizzle
over some olive oil and balsamic vinegar, then top with the second slice of bread.
Cut diagonally in half and sit back, relax and enjoy with an ice cold glass of
sparkling water ~ Diane-Louise Jordan.
My favourite vegetarian sandwich is mozzarella, sun dried tomato, avocado
and basil ~ Fiona Phillips.
My fave veggie sandwich is: white bread, soya spread, a layer of vegan
cream cheese, a layer of avocado and a layer of bananas ~ Wendy Turner-Webster.
Avocados seem to be a favourite but The Vegetarian Society is
on the look out for more inspiring ideas for veggie sandwiches.
