CELEBRITY CHEF CELEBRATES NATIONAL VEGETARIAN WEEK WITH NEW RECIPE VARIATIONS

Flamboyant TV chef Richard Cawley has joined in The Vegetarian Society's challenge to create satisfying veggie food for all the family. Using recipes from the National Vegetarian Week 'Seven Days of Satisfaction' booklet, Richard has developed his own tasty variations. The Ready Steady Cook regular and a veggie of six years, stated "National Vegetarian Week is an important way of raising awareness of a delicious and healthy lifestyle, and a tool for breaking down the myths and assumptions about vegetarian food."

Richard chose to reinvent the Satisfaction Perfect Pasta recipe - transforming it into a sensational Italian Cottage Pie, perfect for those who love bolognaise sauce but aren't so keen on pasta.

Simply spread the Perfect Pasta veggie bolognaise mixture in the bottom of an oven-proof dish and cover with 750g of mashed potatoes, into which you have mixed 1 heaped tbsp of vegetarian pesto. Sprinkle with vegetarian parmesan-style cheese and drizzle with olive oil, then bake at 200c / gas 6 for about 20 minutes until the top is crisp and golden.

After judging a Vegetarian Society Satisfaction Quiche Cook-off, Richard was also inspired to create a variation of the Red Onion and Cheddar Quiche featured in the Satisfaction collection. He suggests making a Sweetcorn, Onion and Stilton Tart. This version uses only one egg and is therefore cheaper and a little less rich.

Roll out the pastry and chill as in the recipe, then for the filling melt 25g butter in a pan and cook 2 chopped onions for 10 minutes until soft. Add 1 rounded tbsp flour and 1 tsp English mustard, simmer for 2-3 minutes then add 75g crumbled vegetarian Stilton and cool. Stir in 1 lightly beaten egg and 125g sweetcorn and pour into the pastry case. Bake at 200c / gas 6 for 30-40 minutes until set and golden.
