Sausages Score High with Veggies!
British Sausage Week Starts September 28th. Celebrate with this delicious recipe from The Vegetarian Society.

Sausages scored high in a Vegetarian Society survey during this year’s National Vegetarian Week, with nearly a quarter of vegetarians claiming that an extra large veggie sausage in a tasty bun, served with a little sauce on the side gives them total satisfaction! British Sausage Week starts on September 28th so why not get some satisfaction vegetarian style with this sensational sausage recipe from The Vegetarian Society.

Vegetarian Sausage Casserole

Serves 4

You will need:
1 pack Vegetarian Sausages, cut into bite-size pieces
1.5lb potatoes, peeled & cubed
2 tbsp veg oil
1 medium onion, chopped
2 cloves garlic, chopped
1 bay leaf
2tsp thyme
2 apples, peeled, cubed
1lb carrots, sliced
1 tin chopped tomatoes
1/2 pt veg stock
1 tbsp tomato puree
Itbsp vegetarian Worcestershire sauce or Hendersons Relish
1 tsp English mustard

What to do…

Par-boil the potatoes, set aside.
Fry onion in the oil for 2 mins
Add garlic, bay leaf & thyme, fry 2 more mins.
Add apple, carrots & sausages
Continue to fry until the sausages are nicely browned
Add tomatoes, tomato puree & potatoes, vegetarian Worcestershire sauce / Hendersons Relish & mustard.
Simmer until cooked.
Pure satisfaction on a plate that all the family will enjoy!
