British Cheese Week, 25th September – 3rd October
Celebrate British Cheese Week with a classic British Cheddar & Red Onion Tart

Cheese is always a winner – loved by omnivores and vegetarians, adults and children - so what better way to mark British Cheese Week than with this tasty British Cheddar & Red Onion Tart recipe from The Vegetarian Society. British Cheddar & Red Onion Tart
Serves 6
Preparation time – 15 minutes
Cooking time – 40 minutes

Ingredients

500g/1lb 2oz short-crust pastry
15ml/1tbsp vegetable oil
1 red onion chopped
100g/4oz tomato sliced
100g/4oz vegetarian Cheddar cheese grated
fresh parsley
250ml/9 fl oz milk
3 free range eggs
salt and pepper

Method

1. Pre heat the oven to 190ºC, 375oF, Gas 5
2. Roll out pastry and line a 9 inch flan case. Allow to stand in the fridge for 30 minutes.
3. Place in the oven for 10 minutes. Then set to one side.
4. Heat the oil in a pan and gently fry the onions for 3 minutes then allow to cool.
5. Spread the onion over the base then cover with the sliced tomatoes.
6. Sprinkle with the grated cheese and the parsley.
7. Place the milk and eggs in a bowl and beat them together. Add a good pinch of salt and pepper.
8. Pour this mixture over the flan.
9. Bake for 30 minutes until set and golden, serve hot or cold with steamed vegetables & new potatoes.

The beauty of this recipe is that you can keep it simple, or get creative and serve it for a special lunch or dinner party. Here are a few ideas to get your juices flowing:

1. Try it bistro style with artichokes and olives.
2. Go continental – throw in some roasted peppers, pesto and sun dried tomatoes.
3. Be creative - try adding asparagus with roasted almonds and garlic.
