The chips are down for sweet potatoes
National Chip Week Starts 16th February.
Celebrate with this healthy, low fat recipe from
The Vegetarian Society

You don’t have to give up your New Year health kick to indulge in this tasty and unusual recipe for chips. Spice up tea-time with The Vegetarian Society’s Sweet Potato Chips – they’re great for dipping and will be loved by grown-ups and kids alike.
Sweet potatoes are packed full of goodness – virtually fat-free, they provide more beta carotene (vitamin A) than any other vegetable and are a great source of vitamin E, vitamin B6, potassium, iron and dietary fibre.
Serve them up this week – perfect with salad and dips, sweet potato chips are just as good with a veggie chilli, baked beans or curry sauce.

SPICED SWEET POTATO CHIPS

Serves 4

You can vary the spice mixture used in this recipe to suit your own taste – or use a little ready mixed curry powder if you prefer.

2 large pink sweet potatoes, peeled and left whole
30ml/2tbsp olive oil
2.5ml/½tsp ground coriander
2.5ml/½tsp ground cumin
1ml/¼tsp ground cardomon seeds
to taste sea salt and black pepper

1. Parboil the sweet potatoes for about 10 minutes, until just tender.
2. Allow to cool slightly and cut into 6mm/¼” slices, lengthways.
3. Mix the olive oil and spices together, brush them over the slices of sweet potato and then grill or griddle for a few minutes on each side until crisp and golden.
4. Sprinkle with sea salt and black pepper, serve immediately.
