Barbecue
With summer just around the corner the time is right to enjoy the pleasure
of cooking and eating outdoors. Barbecues should not just be enjoyed by
meat-eaters. Many vegetarian dishes can be cooked over the coals.
New
potatoes with rosemary and olive oil
Place some baby new potatoes onto a large sheet of foil. Drizzle olive
oil over them and add a couple of sprigs of rosemary. Wrap the foil around
the potatoes and place on the barbie for 20 minutes.
Veggie Ginger

For this dish use a wok or old pan and place it directly on the coals.
Ingredients
50g soya mince
1 onion chopped
1 red pepper sliced
1 green pepper sliced
1 tin of tomatoes
150g mushrooms chopped
3 cloves garlic crushed
½ pint vegetable stock
1 tsp ginger powder
1 tsp turmeric powder
1 tbsp olive oil
Method
Soak the soya mince in boiling water for 20 minutes. Drain then rinse
through a sieve.
Place the wok onto the coals and heat the oil. Add the soya mince and
onion. Fry for 5 minutes. Add the remaining ingredients and cook for 20
minutes.
Corn on the cob.
Sweetcorn is delicious finished off on the barbecue.
Place the corn in a large pan of boiling water. Cook for 10 minutes.
Simply place the corn cobs on the barbecue and sprinkle with salt. Cook
for 5 minutes only turning occasionally.

Kebabs
If you use
wooden sticks soak them in cold water for at least half an hour first. This
will help prevent the sticks from burning from the heat of the fire.
Ingredients
1 red pepper
1 yellow pepper
1 courgette
1 tin pineapple chunks
1 red onion
Marinade
2 cloves garlic
crushed
2 tbsp olive oil
1 tsp soy sauce
Method
Cut all of
the vegetables into chunks. Thread them onto the kebab sticks.
Mix the marinade ingredients in a cup then drizzle it onto the kebabs.
Place onto the barbecue for 10 minutes.
Safety First
Having a barbecue can be lots of fun particularly when the weather
is good. However, it can also be dangerous. Make sure you are always supervised
by an adult. Always have a bucket of water to hand in case of accidents.
Cook on the coals when they have died down. Enjoy your food and have fun.
