Ingredients
Fresh ripe mango,
peeled & cubed
400g/14oz Cherry tomatoes, halved
Large red onion, sliced thinly into half rings
250g/9oz Mixed green salad leaves
1 Fresh ripe mango
1 Large red onion
Dressing
30ml/2tbsp Olive
oil
30ml/2tbsp Rice vinegar
Freshly ground Salt & Black Pepper
Method
Combine all salad ingredients
in a bowl. Mix dressing
ingredients together, pour over salad and toss well.
Transfer to a
serving bowl.
