Cordon Vert goes one better than the World Cup

Knockout food created by chefs from Brazil, the Netherlands and England!

Brazil, Netherlands and England all had representatives at the Cordon Vert cookery school this week. This was no footy match but chefs getting some top training in catering and developing knockout menus for their meat free customers.

The three chefs attending the intensive Cordon Vert Professional Diploma were Peter Macallister from England, Iwan Westdijk from the Netherlands and Marcelo Doin from Brazil.

On gaining their Cordon Vert Professional Diploma the chefs chatted about the course experience.

Peter Macallister - Chef D’Partie, Merton College Oxford, said “Now, I’ve a much better understanding of nutrition, the different products available and methods of using them, I’ve even found out about cashew cream and egg substitutes. It’s been great to taste new flavours and get a greater knowledge of what good veggie food can be like. These are all things that I can put into practice.”

Iwan Westdijk, from the Netherlands, is developing his cookery skills to enhance his career choices. Iwan said, “I found having to cook against the clock while being creative was a real challenge but I enjoyed it. I’ve been inspired by all the different combinations of flavours and the refreshing ways to use ingredients that I wouldn’t have considered.”

Marcelo Doin, a chef from Brazil setting up his own business, commented, “I’ve gained a lot of experience and a professional insight into how I want my own kitchen to operate. I’ve also made friendships that I hope will last.”

The chefs received their diplomas following completion of the course which includes information on nutrition, ingredients, international cuisine, use of meat alternatives and lots of practical cooking sessions. They also conjured up a three course meal in a set time with given limited ingredients and dietary restrictions.
